Delicious grain-free crumbed chicken fingers!

These are a big hit in our house with both the kiddies & hubby!

They are super tasty & healthy!

Serve with your favourite veggies – or alternatively they are great served with a salad and lime mayo as a dipping sauce (with an avocado based oil mayo) 😋

You can cut the chicken into any size you wish, kids love them in nugget sized bites!

 

Ingredients:

3/4 cup extra virgin coconut oil, (for cooking).

1 large egg

2 tablespoons turmeric powder

1 cup almond meal/flour

1 teaspoon sea or pink salt

1/4 teaspoon black pepper

Skinless chicken breasts, cut into strips (or whichever shape preferred) .

 

Method:

Add the coconut oil to a large frying pan and heat on med-high.

Whisk the egg in a bowl, and add the chicken strips coating them in the egg mixture.

Add the almond meal, turmeric, salt & pepper in a bowl and mix together until combined. Place the mixture onto a plate or board.

Take the chicken from the egg mixture and roll them in the crumb mixture until fully coated.

Add chicken to fry-pan and cook for 4-5 min on each side until golden brown and chicken is cooked through.
